Marinated Mozzarella and Salami Bites

Makes 25 Appetizers

1/4 Cup Olive Oil
1/4 Tspn Red Pepper Flakes
Zest from 1 Lemon
1 Tspn Chopped Parsley
Salt and Pepper, to taste
1 Lb Small balls of Mozzarella, packed in water
50 Each slices of Gallo Salami


In a small container, mix together the oil, red pepper, lemon zest, parsley, salt and pepper. Drain the mozzarella balls and add to the marinade. Toss gently to combine. Place in the refrigerator and allow the flavors to meld for at least 1 hour or up to 2 days. Fold each piece of salami into quarters. Spear one folded piece of salami on a fancy toothpick, then spear a ball of mozzarella, then finish with one more piece of folded salami. Repeat until all the cheese is used. Serve immediately.
