Phyllo Packages with Tyropitta

The literal translation of Tyropitta is Greek Cheese Pie

Tyropitta Filling:
Makes about 1 Cup

8 Oz Feta Cheese
1/4 Cup Parmesan Cheese, grated
1/2 Tspn Nutmeg, ground
1/4 Tspn Oregano, dried
1/4 Tspn Thyme, dried
2 Egg yolks
Salt and Pepper, to taste

Phyllo Packages:
Makes about 3 dozen

12 Each Sheets of Phyllo Dough
1 Cup Unsalted Butter, melted


Preheat the oven to 400 degrees

For Tyropitta filling:
Place all ingredients except egg yolks in a food processor. Process until very finely crumbled. Transfer to a mixing bowl and stir in egg yolks. Season to taste with Salt and Pepper.

For Phyllo Packages:
Lay one sheet of Phyllo dough out on a work surface. Brush with melted butter and lay a second sheet of Phyllo dough over the first. Brush again with melted butter. With a sharp knife trim away any irregular or frayed edges. Then, cut into strips about 1-1/2 to 2 inches thick. Dough sheets will be rectangular in shape; cut strips horizontally along shorter span. Place one heaping teaspoon of the filling on the end of the strip. Fold up the package like a flag to form triangles with the seam on the bottom. Repeat with remaining dough and filling. Transfer triangles to a baking sheet leaving about ½ inch spacing in between. Brush tops with remaining butter and bake in the oven for about 12 minutes, or until golden brown. Remove from oven and allow to cool slightly before serving.

Packages can be made ahead and reheated on baking sheets in a 350 degree oven.
