Almond Oatmeal Apple Crisp

1 cup rolled oats; pulsed in food processor

½ cup light brown sugar; packed

1 ½ sticks unsalted butter; chilled

1 cup sliced almonds

1 teaspoon ground cinnamon

¼ teaspoon salt

 

Filling

 

5 cups sliced granny smith apples; ¼-inch thick

1 ½ tablespoons fresh lemon juice

2 Tablespoons sugar

½ teaspoon vanilla

¼ teaspoon cinnamon

¼ teaspoon nutmeg

 

Vanilla Ice cream

  1. Preheat oven to 350 degrees.

 

  1. In a medium bowl combine all ingredients but butter.  Using fingers, mix in butter.  Form  into small balls/chunks.

 

  1. For the filling, combine all the ingredients but the apples.  Toss apples in spiced liquid.

 

  1. Layer apples into a 13 x 9 buttered glass baking dish.  Top with almond oatmeal crisp. 

 

  1. Bake for 45 minutes to an hour until apples are tender and top is brown and crispy.  Remove from oven and let set about 10 minutes before serving.

 

  1. Serve with ice cream.
